Healthy Reese’s Peanut Butter Egg Recipe

Don’t believe that peanut butter, chocolate and HEALTHY belong in the same sentence? Well, these homemade Reese’s peanut butter eggs will blow your mind.
And your taste buds.
There’s nothing wrong with enjoying a few Reester Eggs (peanut butter cups shaped like eggs) on any day and especially not on Easter! That being said, I wanted to share this more macro-friendly version for those of you that would like to have your cake and eat it too.
Ingredients
42g PB Fit
20g Peanut butter
15g Protein powder
15g Coconut flour
70g Chocolate chips
1 tsp Coconut oil
Recipe:
Mix PB Fit with water until it’s a peanut butter-like consistency
Combine 42 grams of PB Fit, 20 grams peanut butter, 15 grams protein powder, 15 grams coconut flour in a bowl
Form mixture into eggs
Cool in fridge or freezer for 30 minutes
Meanwhile, measure 60-80 grams of chocolate chips and 1 tsp of coconut oil.
Put in bowl, microwave for 30 seconds, stir, microwave for 30 seconds
Remove “eggs” from fridge or freezer and dip them into the chocolate mixture
Put the eggs back in the freezer for 30 minutes
Enjoy!
Compared To Store-Bought…
The recipe makes about 8 eggs and the macros for each are:
70 calories
5 grams protein
7 grams carbs
4 grams fat
1-2 grams added sugar
Compared to the macros of the Reester Eggs you’ll find at your local food store:
170 calories
4 grams protein
18 grams carbs
10 grams fat
15 grams added sugar
Note the difference in added sugar per serving! Need I say more?
